This cake is a southern family recipe going back 2 generations. My good friend June would come over and share this cake with me over a cup of tea and we would share our passions and love for food. June is a green thumb and also a "cordon bleu". I have been very fortunate to have her as my friend. I cherish her. This cake takes time to make since every pecan is shelled fresh from the trees of South Carolina. For some reasons that I have not yet found this cakes gives me "Deja-Vue" of maple flavors even without the maple. Who'd figure? June enriches my life with her friendship and cake too.

2 Tbsplemon juice

11/2 cmilk

1 stickbutter
- ICING

11/2 cpecans finely chopped

2 cmilk

2 mdeggs

1 csugar

1/3 cbutter

2 tspvanilla extract
How To Make june's out if this world pecan cake

1Make the cake with the milk, butter and lemon juice. Pour into 3/8 inches greased cake pan. Bake according to the directions on the box. In the meanwhile chop finely the pecans.

2Icing: Wisk the eggs and sugar together and add to the milk .Cook slowly until the mixture thickens. Be patient and cook it over low heat so the mixture will not burn. Once it reaches the desired thickness, add the butter and stir well. Let it cool and then add the chopped pecans to the custard.

3Now you are ready to ice the cake. On one layer spread the pecans mixture than add the other cake layer and spread the pecans mixture. Add the other layer and finish by spreading the whole cake. This is a million dollar cake that you will never find anywhere so hurry and make it and let me know your comments. This Cake has my overwhelming endorsement and admiration as a French Pastry Chef!

5June made this cake over and over and I can't get tired of it. Only God knows home many cakes I had in my life and none of them EQUAL JUNE'S ONE!!
