I have been making this for many years. I started making them in coffee cans and vegetable cans to give as gifts and to send for gifts they are real handy when needing to ship in the mail or Fed-Ex or by UPS. What is real nice about baking in the cans is when you slice them is that they fit in the toaster perfectly or on a party tray beautifully. I love the 3C bread more so because I am not a big fruit cake person. Sometimes I add spiced rum for that special touch.

Ingredients For jodie's 3c bread

2 1/2 call purpose flour

1 tspsea salt

1 tspbaking powder

1/2 tspmace

3 lgeggs beaten (farm fresh)

1/2 ccooking oil

1 ccane sugar

1/2 chalf and half

2 ccarrots, grated

1 1/3 ccoconut flaked

1/2 cmaraschino cherries (chopped)

1/2 cwalnut pieces, chopped
- BAKERS JOY FOR SPRAYING THE LOAF PANS OR FOR CANS

1/4 cup craisins or currants (opt)
How To Make jodie's 3c bread

1Preheat oven to 350* Stir together all dry ingredients. Combine eggs, oil, and milk. Add to dry ingredients, mix well. Stir in carrots, coconut, cherries, and nuts, pour into loaf pan or, coffee cans (2) or you can use vegetable cans (4-6) fill 1/2-3/4 full on cans bake 45-50 min....

2Cool for 10 min insert knife all the way around cans and shake to remove from cans. remove from loaf pan let cool completely wrap and store over night before slicing Makes 1 Loaf
