This recipe came from my mothers best friend many years ago. Best carrot cake I have ever eaten.

Ingredients For jill's carrot cake

2 csugar

1 1/4 cvegetable oil

2 cflour
-
2 tspbaking soda

1 tspsalt

2 tspcinnamon

4eggs
-
3 ccarrots, grated

1 cwalnuts, chopped
- FROSTING

1/2 cpowdered sugar

1/2 sticksoft butter
-
4 ozcream cheese, room temp.

1 tspvanilla extract
How To Make jill's carrot cake

1Pre-heat oven to 350 degrees. Grease and flour 13 X 9 pan.

2Cream sugar and eggs, Add oil, nuts and carrots. Add sifted ingredients.

3Pour into the prepared 13 X 9" pan. Bake for 45 to 50 mins.

4Cool cake completely.

5While cake is cooling, combine all frosting ingredients. Mix well.

6When cake is cooled frost.
