This recipe came from my mothers best friend many years ago. Best carrot cake I have ever eaten.

Ingredients For jill's carrot cake

  • 2 c
    sugar
  • 1 1/4 c
    vegetable oil
  • 2 c
    flour
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon
  • 4
    eggs
  • 3 c
    carrots, grated
  • 1 c
    walnuts, chopped
  • FROSTING
  • 1/2 c
    powdered sugar
  • 1/2 stick
    soft butter
  • 4 oz
    cream cheese, room temp.
  • 1 tsp
    vanilla extract

How To Make jill's carrot cake

    Pre-heat oven to 350 degrees. Grease and flour 13 X 9 pan.

    Cream sugar and eggs, Add oil, nuts and carrots. Add sifted ingredients.

    Pour into the prepared 13 X 9" pan. Bake for 45 to 50 mins.

    Cool cake completely.

    While cake is cooling, combine all frosting ingredients. Mix well.

    When cake is cooled frost.
