Ingredients For jamaican cake

  • 1 c
    sugar
  • 1 c
    light brown sugar
  • 1 c
    oil
  • 3 c
    flour
  • 2-3
    ripe bananas, diced
  • 3
    eggs
  • 1 can
    (20 ounces) crushed pineapple with juice
  • 1 tsp
    vanilla
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon (optional)
  • 1-1/2 c
    chopped pecans

How To Make jamaican cake

    Mix together sugar, oil, pecans, flour and bananas in a 9 X 13 inch baking pan.

    Stir in the eggs, pineapple, vanilla, salt and baking soda. Mix well. Do not mash the bananas. Can be topped with shredded coconut.,

    Bake at 350 degrees for 60 minutes. If cake is getting to brown, tent with foil after 40 minutes.
