Ingredients For irish chocolate -mint cheesecake bars

  • 1 pkg
    betty crocker triple chocolate fudge cake mix
  • 1/2 c
    butter, softened
  • 3
    8 oz pkgs reduced-fat cream cheese, softened
  • 1
    16 oz container cream cheese frosting
  • 3 lg
    eggs
  • 6
    drops, or more as needed green food coloring
  • 3
    drops creme de menthe liquer
  • 1
    10m oz pkg nestle dark chocolate and mint chips

How To Make irish chocolate -mint cheesecake bars

    Heat oven to 325. Spray a 9" x 13" baking pan w/ cooking spray. In bowl, beat cake mix and butter on low until crumbly. Set aside 1 cup for topping.

    Press remaining crumb mix into bottom of pan. Bake 10 mins. Remove from oven. In another bowl, beat cream cheese and frosting on medium until smooth. Beat in eggs, one at a time until blended well. Pour in food coloring, beat until blended and green.

    Beat in liquer. Pour batter over crust in pan. Top w/ 1 cup chocolat-mint chips. Reserve remaining chocolate chips. Bake for about 42-45 min or until toothpick inserted in center comes out clean. remove from oven and cool. Place reserved chocolate chips in microwave bowl. Microwave in 45 second intervals until melted and smooth. Sprinkle top of cake w/ reserved crumbs. Drizzle melted chocolate over cake, cool. Cut into bars.
