These are fun and delicious with all banana split ingredients in the cupcake. The frosting is simple. I used pre-made frosting.Decorate with fun sprinkles or nuts and fruit. I brought these to a cookout and they were a hit! Enjoyed by kids and grown ups, simply set up like icecream bar.

Ingredients For icecream bar banana split cupcakes

  • 1/2 c
    room temp unsalted butter
  • 1 c
    sugar
  • 2
    eggs
  • 1/3 c
    strawberry yogurt
  • 1 tsp
    baking soda
  • 2 c
    all purpose flour
  • 1 c
    mashed bananas
  • 1/2 c
    mashed strawberries
  • 1/2 c
    chopped dried pineapples
  • 1/2 c
    chocolate chips
  • 1/2 c
    chopped walnuts

How To Make icecream bar banana split cupcakes

    Cream butter and sugar in bowl. Mix in eggs, yogurt, flour, and baking soda. Stir in bananas, strawberries, pinapples, chocolate, and nuts.

    Fill cupcake liners about 3/4 full. Bake 350 preheated oven for 20 min, or til done.

    I chose to frost half dozen cupcakes each with store bought strawberry, chocolate, and vanilla frosting. Set up bar of nuts, sprinkles, cherries, strawberries,bananas,& pineapples. Let your quests decorate. Serve with icecream also. So much fun!!!!
