Ingredients For hummingbird cake

3 call-purpose flour
-
1 tspbaking soda
-
1 tspsalt
-
2 csugar
-
1 tspground cinnamon

3 lgeggs, beaten

1 cvegetable oil
-
1 1/2 tsppure vanilla extract
-
1 can(8oz) crushed pineapple, undrained
-
1 cchopped pecans
-
2 cchopped bananas
- CREAM CHEESE FROSTING
-
1 pkg(8 oz) cream cheese, softened
-
1/2 cbutter, softened
-
1 pkg(16 oz) powdered sugar, sifted
-
1 tsppure vanilla extract
-
1/2 cchopped pecans for top of cake
How To Make hummingbird cake

1Combine first five ingredients in a large bowl; add eggs, and oil, stirring until dry ingredients are moistened.

2Stir in vanilla, pineapple, 1 cup pecans, and bananas. Do not beat...just stir them in.

3Pour batter into 2 greased and floured 9" round cake pans. Bake at 350 degrees F for 25-30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.

4Cream Cheese Frosting: Beat cream cheese and butter at medium speed, with an electric mixer until smooth. Gradually add powdered sugar, beating at low speed until light and fluffy. Stir in vanilla.

5Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.
