homemade ice cream cake

I've never been one for making homemade cakes because most recipes are very heavy and the taste is a little different. We're use to box cakes and I really wanted a recipe that taste like a box, well this is it. It's time consuming, but definitely worth it, especially if you're one who likes homemade cakes.

Ingredients For homemade ice cream cake

2 1/3cake flour

1 1/2sugar

3 1/2 tspbaking powder

1 1/2 tspsalt, divided

1 1/3 cplus 1/4 cup of milk

1/4 cvegetable oil

3eggs
-
1 cbutter, divided
-
3 1/2 Tbspvanilla extract, divided

2 qtvanilla ice cream
-
1/2 cshortening
-
3 cconfectioners' sugar
How To Make homemade ice cream cake

1Preheat oven to 350'. Cut out wax paper to line bottom of 2 greased 9" cake pans. This makes it easier to remove from the pans and easier clean up. Put in bottom of pans and spray pans again.

2Mix together first three ingredients and 1 tsp of salt. Set aside.

3Mix together 1 1/3 cup of milk and vegetable oil

4Combine flour mixture and milk mixture. Add eggs one at a time, mixing well between each. Mix in 1/2 cup of butter and 1 1/2 tbsp of vanilla extract. Mix for two more minutes. Pour in pans and bake for 25-30 minute or until cake tester or toothpick come out clean.

5Set on cooling racks for 15-20 minutes then remove from pans. Peel wax from bottom of cake layers.

6While cake layers are cooling, combine remaining butter and shortening. Mix in remaining vanilla extract and remaining salt. Mix in remaining milk and powdered sugar, alternating between milk and sugar until well blended. Set aside.

7After cakes have completely cooled, place for layer on cake platter. Cover with ice cream (you can let it soften a bit to make it easier to work with or cut block ice cream in sections and lay on top). The second suggestion is a little tougher to work with, but you have a longer time to work with the ice cream before it gets too soft.

8Put a layer of frosting over the ice cream and around the sides.

9Place second layer on top and finish frosting. Place in freezer for at least 30 minutes before serving. Enjoy!!
