I guess you could call this Grandma W's version of a fruitcake? Except there are only cherries inside along with pecans.

  • 1/2 c
    pecans, finely chopped
  • 8 oz
    cream cheese, softened
  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 1 1/2 tsp
    vanilla
  • 1 1/2 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 4
    eggs
  • 2 c
    flour
  • 1 1/2 tsp
    baking powder
  • 8 oz
    maraschino cherries
  • 1 c
    chopped pecans
  • GLAZE:
  • 1 1/2 c
    powdered sugar
  • 2 Tbsp
    milk

How To Make holiday pecan cake, grandma w

  • 1
    Oven to 325 degrees. Grease tube pan, sprinkle with 1/2 cup pecans. Beat cream cheese, margarine, sugar, vanilla, cinnamon and nutmeg until fluffy. Add eggs, one at a time, beating well after each addition. Combine flour and powder, add and mix well. Stir in drained and chopped cherries and pecans. Pour into pan. Bake 1 hour 15 min, toothpick test. Cool 5 min, remove from pan. Drizzle with glaze. Store tightly covered.
