1 cfresh moist raisins

1 ccoconut, flaked

1 cchopped nuts (pecans or walnuts)
- FROSTING

12 ozpowdered sugar

2 pkg3 oz cream cheese (room temp)

1 5/8 tspvanilla extract

2 Tbspbutter
-
2 Tbspmilk

1/2 cchopped nuts
How To Make helen's superb carrot or plum cake

11.In large bowl, beat sugar and oil. Add eggs and beat well.

2Sift together flour, soda, cinnamon, and salt into egg mixture; mix well; fold in carrots and nuts.

3Place batter in greased 9x13 pan; bake for 45 minutes in a 350 oven. (Check once because of oven variances.)

4FROSTING: Beat together powdered sugar, cream cheese, vanilla, butter and milk; spread on cooled carrot cake.
