I got this recipe from Weight Watchers and it has become a fave of ours. Great for those watching their weight and for diabetics!!!

Ingredients For healthy coconut cake

  • 1 box
    white cake mix
  • 1 can
    diet Sprite (or any lemon lime soda)
  • 1 c
    water
  • 1 c
    Splenda
  • 1 tsp
    coconut extract
  • 1 sm
    sugar-free cool whip
  • coconut to sprinkle on top

How To Make healthy coconut cake

  • 1
    Preheat oven to 325 degrees. Spray 9x13 glass dish with cooking spray.

    Mix cake mix and Sprite until well blended. Pour into pan and bake 30 minutes.

    While cake is baking, mix water, splenda and coconut extract and set aside.
  • 4
    Poke holes in hot cake with a fork. Pour water mixture over cake and allow to cool completely.

    Spread cool whip on cooled cake and sprinkle with coconut.
  • 6
    Refrigerate until ready to serve.
