I work at the High School and this is one of the cakes we make, So i cut the recipe down to a smaller one. It was wonderful.

2 coil, vegetable

2 1/4 cflour (all purpose)

2 1/8 tspcinnamon

1 3/4 tspallspice, ground

1 1/2 tspbaking powder

3/4 tspbaking soda

3/4 tspsalt, table

2 1/4 csweet potato, canned mashed

3eggs
-
1/3 cwater, cold

1 Tbspwater, cold

1 1/2 tspvanilla extract

3/4 cpowered sugar

1 Tbspwater, hot
-
1 5/8 Tbspwater, hot

1/8 tspvanilla extract

How To Make harvest cake

1Preheat oven to 350, Spray or butter pans

2In a large mixing bowl mix oil,granulated sugar, and eggs

3Mix all dry ingredients together, add dry ingredients slowly to oil mixture. Beat

4Add water and Vanilla mix until well blended.

5GLAZE: Mix together powered sugar, hot water, vanilla extract, butter, and honey until well mixed.

6Pour glaze over cake while warm
