I first tasted this cake at a Mother's Club meeting when my 44 year old son was in Cub Scouts. I immediately asked for the recipe and have been baking this cake and sharing this recipe ever since. Don't think you have added too many apples. There is barely enough batter to cover all of the apples. The recipe does list adding nuts as an option. For some reason, I've never made it with nuts.

Ingredients For harvest apple cake

    apples, peeled, cored and sliced
  • 1 c
    vegetable oil
  • 1 tsp
    salt
  • 1 1/3 c
    sugar
  • 1 tsp
    cinnamon
  • 3
    eggs
  • 1 tsp
    vanilla
  • 2 c
    plus 2 tbsp. flour
  • 1 tsp
    baking soda
  • 1/2 c
    nuts (optional)

How To Make harvest apple cake

    Preheat oven to 350°. Grease a bundt or tube pan.

    Cream oil, salt, sugar, cinnamon, eggs and vanilla. Stir in sliced apples. Sift flour and baking soda and add to creamed mixture.

    Pour into prepared pan and bake approx. 45 minutes. If a tube pan is used, add 10-15 minutes to baking time.

    Dust with confectioner's sugar after cake has cooled completely.
