In another life, I re-worked recipes for a health and fitness site. There are times when you just need something sweet. This recipe can help you do that without completely falling off the fitness bandwagon. Is it a health food? Of course not. But, it's better than a total chocolate cake faceplant meltdown. lol Healthy eating is simply making good choices. This cake has 198 calories per slice vs. a traditional banana cake at a whopping 400 calories. You don't have to be perfect every day. You just have to be better than you were and fully prepared with easy, healthier recipes.

Ingredients For guilt-free banana cake

  • DRY INGREDIENTS
  • 1 1/2 c. all pourpose flour
  • 1/2 tsp. salt
  • 1/3 c. white sugar
  • 1 tsp. each baking powder, baking soda and cinnamon
  • WET INGREDIENTS
  • 1 c. very ripe bananas, mashed
  • 2 tsp. vanilla
  • 1 egg
  • 1/4 c. milk
  • 3 tb. canola oil
  • 1/2 c. sour cream or plain yogurt (non-fat not recommended)

How To Make guilt-free banana cake

    Preheat oven to 375 degrees. Grease a 9x9 pan and set aside. (I use a metal pan.)

    Add all dry ingredients to a large bowl and whisk thoroughly.

    In another bowl, whisk egg. Add remainder of wet ingredients and whisk thoroughly.

    Pour wet ingredients into dry ingredients, mixing just until no dry particles remain. Pour into prepared 9x9 pan and bake for approximately 20 minutes. Check with a toothpick for doneness and cake springs back when touched. (You may want to tent the pan loosely with foil if browning too quickly.)

    Cool completely before slicing. Add a sprinkle of powdered sugar, a dollop of fat free whipped topping and a generous sprinkle of cinnamon.
