What self-respecting gorilla wouldn't appreciate a Bundt cake chock full of bananas, chocolate chips, and walnuts?

The sour cream makes this a moist cake. You can choose a dusting of powdered sugar on top of the cooled cake or opt for a decadent glaze of 1/2 cup powdered sugar, 1 tsp milk or cream, and a TBSP of Kahlua or banana liquor.

Moist and full of banana flavor, this easy Bundt cake is delicious! The walnuts add some crunch. The chocolate chips are a nice surprise and pair so well with the banana. We opted for the glaze and added a bit of Kahlua. The cake alone is really good without the glaze, but it's definitely a nice final touch.

Ingredients For grinnin' gorilla bundt cake

  • 2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1 pinch
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 3 md
    ripe bananas, mashed with fork
  • 1/2 c
    sour cream
  • 1/2 c
    softened butter
  • 3/4 c
    finely chopped walnuts or pecans
  • 1 c
    granulated white sugar
  • 1/2 c
    light brown sugar firmly packed
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 3/4 c
    semi-sweet chocolate chips
  • OPTIONAL GLAZE TOPPING
  • 1/2 c
    powdered sugar
  • 1 Tbsp
    Kahlua or banana liquor
  • 1 tsp
    milk, cream or half n' half

How To Make grinnin' gorilla bundt cake

  • 1
    Preheat oven to 350 degrees. Adjust oven rack to center position.

    Grease and flour a 10-12 cup bundt pan.

    In a medium bowl, mix flour with baking soda, salt, baking powder and cinnamon. Add the walnuts into the mixture and coat well. Set aside.

    Mash bananas with a fork in a small bowl and add in the sour cream. Set aside.

    In a stand mixer bowl or a large bowl with hand mixer, beat the butter and sugars at low speed.

    Add the eggs in one at a time until light and fluffy. Add the vanilla.

    To the butter/sugar/egg mixture, add in the flour alternating with the banana mixture.

    Mix at medium speed until all ingredients are incorporated.

    Fold in the chocolate chips.

    Pour the batter into bundt pan.

    Bake for 50-60 minutes or until cake tests done with a toothpick.

    Let cake rest for 10 minutes in the baking pan and then invert over a caking rack to cool completely.

    Dust the cooled cake with powdered sugar or make a glaze with the milk, powdered sugar and Kahlua if desired. Drizzle over cooled cake.

    Store at room temperature under a cake dish or tightly wrapped.
