I don't really care for Angel food cake but thought I'd play around with it to see if I could find a way to atleast tolerate it. This was simple and rather tastey!

Ingredients For grilled angelfood cake with fresh fruit salsa

1prepare angelfood cake
- FRUIT SALSA

1 cchopped cantelope or honey dew melon, or half a cup of each

1/2 cstrawberries chopped

1/2 cblueberries
-
1 crasberries
-
1/2 cblackberries
-
1/4 csugar
-
2 Tbsplime juice
-
1 Tbspfresh mint, chopped

1/8 tspcayenne (optional if you want a little heat)
- GARNISH

sherbet or sorbet, any flavor you prefer
How To Make grilled angelfood cake with fresh fruit salsa

1In a bowl, mix fruits, sugar, lime juice, mint and cayenne (if you are adding heat). Cover and refrigerate a couple of hours before serving. You can also do this the night before and the flavors can blend completely!

2Prepare and preheat grill. I did use some foil on my grill but spraying with cooking spray is okay as well.

3Slice angelfood cake horizontally, place cut side down on grill.

4Grill for about 30-60 seconds or until light golden brown. Carefully flip cake and grill for another 30-60 seconds until golden brown. DO NOT LEAVE CAKE UNATTENDED, IT WILL BURN FAST!!!

5Cut cake into about 8 pieces, top with fruit salsa and a scoop of sherbet.
