This cake is something my Grandma made during the depression. I always thought it sounded odd, but it is actually pretty good. My Dad said that as kids (he was one of 9) it was one thing that was always a treat.

Ingredients For grandma's poor man's cake

  • 1 c
    brown sugar
  • 1 c
    raisins
  • 1 tsp
    cinnamon
  • 1/2 tsp
    allspice
  • 1/4 tsp
    cloves, ground
  • 1/3 c
    shortening (crisco)
  • 1 c
    water
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt

How To Make grandma's poor man's cake

    In a large sauce pan boil 1 cup water, add first 6 ingredients, boil together until luke warm, stir. Remove from burner

    In large mixing bowl add all dry ingredients, mix together with fork. Sift into the sauce pan. Mix well.

    Grease or spray a 9x9 baking dish. Pour mixture in dish, and spread evenly.

    Bake at 350 for 30-35 minutes. Watch it towards end so it doesn't get too dark. Enjoy! (You might be able to make this gluten free by using a gluten free flour, haven't tried it, but it might work.)
