- CAKE:

1 cquick oatmeal

1 1/2 cboiling water

1 cgranulated sugar

1 cbrown sugar
-
1/2 coleo (butter or margarine)

2 mdeggs
-
1 1/2 cflour
-
1 tspcinnamon
-
1 tspbaking soda
-
1/2 tspsalt
- FROSTING:
-
2 Tbspsoft oleo (butter)

1 cbrown sugar
-
1/2 cmilk or cream
-
1 tspvanilla extract
-
3/4 cflaked coconut
-
3/4 cchopped pecans
How To Make grandma's oatmeal cake

1Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature).

2Combine sugars, oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well.

3Pour into sprayed 9x13-inch cake pan. Bake at 350F oven for 40-50 minutes.

4Frosting: In a small saucepan combine butter, sugar and milk, heat to boiling. Remove from heat add vanilla, coconut and pecans.

5Spread on cake while it is still warm.
