grandmas luscious rhubarb cake

People give me rhubarb in the spring so I make them something for it as payment, usually its a pie but this year my neighbors daughters new husband wanted a cake like his grandmother used to make. So went to my grandmothers recipes and found one, he loved it. The brown sugar cream cheese frosting is my recipe I usually put it on applesauce cake.

  • 2 c
    rhubarb (diced)
  • 1/2 c
    brown sugar
  • 1/2 c
    butter
  • 1 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 1 lg
    egg
  • 2 c
    flour
  • 1 tsp
    baking soda ( or bicarbonate as grandmas recipe says)
  • 1 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 1 c
    sour milk or buttermilk
  • BROWN SUGAR CREAM CHEESE FROSTING
  • 8 oz
    cream cheese
  • 1/4 c
    butter (sofened)
  • 3/4 c
    brown sugar
  • 1/4 c
    powdered sugar
  • 1/2 tsp
    vanilla

How To Make grandmas luscious rhubarb cake

    Sift flour, baking soda,cinnamon, and salt, set aside.

    Cream butter, sugar, egg and vanilla, add the dry ingredience alternately with the sour milk mixing well.

    Add rhubarb mixture to batter, pour into a greased 13x9 pan bake in a 350 oven for 50-55 minutes. cool

    Cream together cream cheese and butter, add brown sugar, powdered sugar and vanilla mix well frost cake.
