This is my grandma's fresh apple cake recipe. I have tweaked it but there is very little you can do to country baking perfection. I miss her dearly and this is my way of keeping her around.

Yum! Melissa's apple cake recipe has simple ingredients and doesn't require any fancy equipment. We love those types of old-fashioned recipes. This cake uses shredded apples that add a lot of moisture to the cake. Full of cinnamon flavor, it's dense and tender at the same time. Pecans add a nice crunch, but if you don't love nuts in your baked goods leave them out. This apple cake will be just as good. We opted to dust with a little powdered sugar and that added a pop of sweetness. A delicious fall recipe.

    peeled and shredded apples (any kind sweet or tart depending on your taste) I leave the skin on my apples
  • 2 c
    sugar
  • 2 c
    all-purpose flour
  • 1 1/2 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    salt
  • 2
    eggs
  • 3/4 c
    oil
  • 1c
    pecans chopped (optional)
  • (options) powder sugar to sprinkle on top, caramel to drizzle, ice cream, Cool Whip

  • Shredded apple and sugar in a bowl.

    Stir shredded apples and sugar in a large bowl.
  • Dry ingredients added to the bowl.

    Add dry ingredients (flour, baking soda, cinnamon, and salt).
  • Oil and egg mixed together.

    Stir in the egg mixed with the oil into a measuring cup.
  • Egg mixture being poured into the batter.
