THIS IS A VERY DELICIOUS CAKE. EVERYTIME I MAKE IT PEOPLE REALLY GOBBLE IT DOWN AND COMMENT ON HOW DELICIOUS IT IS. IN FACT THEY ALWAYS WANT ME TO MAKE ONE FOR CHRISTMAS.

Ingredients For grandma betty's carrot cake

    salad oil
  • 1 c
    sugar
  • 4
    eggs one at a time {mix well} gradually add
  • 2 c
    sifted flour
  • 1 tsp
    baking soda
  • 3 Tbsp
    cinnamon
  • 3 Tbsp
    vanilla extract
  • 3 c
    finely grated carrots
  • 1 tsp
    salt
  • MIX WELL BAKE AT 350 DEGREES TILL DONE ABOUT 1 - 1 1/2 HRS IN A TUBE PAN
  • NUT ICING
  • 1
    stick butter melted
  • 1
    3 oz. philly cream cheese
  • BEAT TILL CREAMY THEN GRADUALLY ADD

    box confectioners powered sugar
  • 1 Tbsp
    vanilla extract
  • 1 c
    chopped pecans
  • WHENEVER I MAKE THIS CAKE THE ICING RECIPE IS REALLY TOO MUCH FOR ONE CAKE SO I USUALLY DOUBLE IT AND IT IS ENOUGH ICING FOR 3 CAKES
