This Jersey girl's version of St. Louis Gooey Butter Cake

Ingredients For gooey butter cake

  • BASE
  • 2 1/2 c
    flour
  • 1 3/4 c
    sugar
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    butter, melted
  • 1 lg
    egg, at room temperature
  • 1 1/2 tsp
    vanilla
  • TOPPING
  • 3 Tbsp
    + 1 tsp corn syrup
  • 2 1/2 tsp
    vanilla
  • 12 Tbsp
    butter, softened
  • 1 1/2 c
    sugar
  • 1 lg
    egg
  • 1 c
    + 3 tbs flour
  • confectioners' sugar

How To Make gooey butter cake

    Grease 13"x9" baking dish.

    In a large bowl combine flour, sugar, baking powder and salt.

    In another bowl, whisk together melted butter, egg and vanilla.

    Add wet ingredients to flour mixture to combine.

    Press onto bottom of baking dish.

    Preheat oven to 350 degrees.

    Topping: In a small bowl mix corn syrup with 2 tablespoons water and vanilla.

    Using mixer cream butter and sugar until light and fluffy.

    Beat in egg.
  • 10
    Alternately add flour and corn syrup.

    Spoon topping over cake base. Using spatula spread inn even layer.

    Bake for 35 to 40 minutes.

    Cool in pan before sprinkling with confectioners' sugar.
