When you have company over this is the easiest, fastest and tastiest "Petit-Dejeuner" you could ever offer. This served with a fresh COINTREAU orange fruit salad. They could not ask you more.. but of course for a second helping...or another piece to go home...

Ingredients For good morning cafe cake
- BOTOM LAYER

1 pkgyellow cake mix

1/2 cmelted butter
-
1 lgegg
- MIDDLE LAYER

8 ozcream cheese, room temperature

2 cpowdered 10x sugar

1 cheavy cream
-
1 tspvanilla extract
- TOP LAYER
-
2 cblack raspberries or red raspberries
How To Make good morning cafe cake

1Mix components of the bottom layer together. Pour into one 8 inches square or 2 greased pans. I prefer to pour into 2 square pans depending of how much you want your crust to be thick. Do not worry the mixture will be thick. Bake at 350 degrees for about 20-30 minutes. Check the doneness. Do not over cook it.

2Mix the middle layer together except the heavy cream. Whip the heavy cream and FOLD it into the cream cheese. Spread over the bottom layer. This should have a good 2 inches thickness.. Now cool in refrigerator for at least two hours or the day before depending on when you plan to serve.

3Cover it with fresh fruits.......and sprinkle it with powdered sugar just before you serve it.
