If you miss the taste of Starbuck's Orange cake this one is close. This recipe is actually easier....you don't need to boil your oranges before making the recipe. Oh so yummy too.

Ingredients For gluten free orange cake

  • 1 c
    gluten free flour mix
  • 1/2 c
    almond meal
  • 3/4 tsp
    xantham gum
  • 1/2 c
    milk powder or whey powder
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    sugar
  • rind of 1 orange
  • juice from 2 oranges, room temperature
  • 8 Tbsp
    butter, melted and cooled
  • 1 1/2 tsp
    vanilla extract
  • 1 large egg plus 1 egg white, lightly beaten

How To Make gluten free orange cake

    Preheat oven to 350. Grease and 8x8 pan set aside. Squeeze juice from 2 room temperature oranges ( juice should equal 2/3 cup) If you don't get enough juice from 2 oranges just add enough water for it to come to 2/3 cup total. place dry ingredients in mixing bowl. Stir to combine. Add wet ingredients and combine. Mix well.

    Transfer to prepared pan. Bake 25 minutes. If you want to make into cupcakes grease a 12-cup muffin tin filling 3/4 full and bake 19 minutes or until toothpick comes out clean.
