glazed jam cake (a coffee cake)
I love the sweetness of a good coffee cake in the morning. Pair that with an equally good cup of coffee and scrambled eggs, and that's a breakfast I can rave about. This is a relatively easy cake to make. Just follow the steps to create the different layers. Don't overwork anything and you will have great success. I particularly like using a mixed berry jam for this recipe, but I leave that up to you. The possibilities are only limited to the flavors of jam available. Have a SWEET MORNING!

1 call purpose flour

1/4 csugar

3 Tbspcold unsalted butter

1/2 tspsalt

1 1/2 tspbaking powder

1 lgegg, beaten

1/2 cmilk
- JAM LAYER

1/3 cjam, any flavor
- STREUSEL TOPPING
-
3 Tbspall purpose flour
-
3 Tbspsugar
-
1-2 pinchsalt
-
2 Tbspcold unsalted butter
-
1/2 tspcinnamon
- CONFECTIONER'S GLAZE
-
3/4 cpowdered sugar
-
1/ tsppure vanilla extract
-
1 1/2-2 Tbspmilk
How To Make glazed jam cake (a coffee cake)

1Place the first 5 ingredients in a medium bowl. Incorporate the cold butter by using a pastry blender until a coarse meal is achieved.

2Fold in the milk and beaten egg, just until mixed. Do not over mix.

3Spread the cake batter in a well buttered 9 inch pie tin.

4Using a spoon, drop dollops of jam over the cake batter. Using the back of a spoon, carefully spread the jam so that you have an even layer.

5Place the Streusel ingredients in a small mini-processor. Pulse about 12 pulses to make a slighly lumpy meal.

6Sprinkle the streusel topping over the cake evenly.

7Bake in a 375 degree oven for about 27 minutes. Test with a pick.

8Cool the cake a bit and put the glaze together by mixing in a small bowl. Drizzle the glaze over the cake while it is still warm. Set 10 minutes and serve, or serve later at room temperature.
