This is my German friend Hilda's mother's recipe for Blitzkuchen mit Apfeln (German apple cake). It's a very old one. I have enjoyed this at her home many times and it's a keeper. Don't shy away from this recipe. I am sure you will enjoy it and want a second helping.

Ingredients For german apple cake

4 - 6 mdtart apples

1/2 cplus 3 Tbsp lemon juice, divided

2 tsplemon zest
-
3/4 cplus 3 Tbsp granulated sugar, divided

4 Tbspunsalted butter, room temperature, divided

2 lgeggs, separated

1 tspbaking powder
-
1 1/2 call-purpose flour
-
3/4 cmilk
-
1 Tbsprum
-
1 Tbspvegetable oil
-
1/4 cpowdered sugar
How To Make german apple cake

1Preheat the oven to 350 degrees F. Grease a 10-inch springform pan with 1 Tbsp of butter.

2Peel apples. Core and cut in half. Cut decorative slits lengthwise in apples, about 1/2 inch deep.

3Sprinkle 3 Tbsp of lemon juice and 3 Tbsp sugar. Set aside.

4Cream the remaining butter and sugar together. Then with egg yolks, beat in one at a time.

5Gradually beat in the remaining 1/2 cup of lemon juice and the lemon zest.

6Sift flour and baking powder together.

7Slowly add the flour mixture to the butter mixture.

8Beat in the milk and rum.

9In a small bowl, beat egg whites until stiff.

10Gently fold the beaten egg whites into the batter.

11Pour batter into the springform pan and top with the apple halves. Place the apples with the slit side up and the cored side down in the batter.

12Brush apples with 1 Tbsp vegetable oil.

13Bake in the 350 degree oven for 45 - 55 minutes or until a tester comes out clean.

14Let cool slightly and remove the sides of the pan. Once cooled, dust with powdered sugar.
