This is my German friend Hilda's mother's recipe for Blitzkuchen mit Apfeln (German apple cake). It's a very old one. I have enjoyed this at her home many times and it's a keeper. Don't shy away from this recipe. I am sure you will enjoy it and want a second helping.

Apple lovers, you need this beautiful and tasty German apple cake in your recipe box. Apple halves are surrounded by a light and tender cake. The baked apples are a nice complement to the buttery cake. Lightly dusted with powdered sugar, this is an easy dessert for any occasion.

Ingredients For german apple cake

  • 4 - 6 md
    tart apples
  • 1/2 c
    plus 3 Tbsp lemon juice, divided
  • 2 tsp
    lemon zest
  • 3/4 c
    plus 3 Tbsp granulated sugar, divided
  • 4 Tbsp
    unsalted butter, room temperature, divided
  • 2 lg
    eggs, separated
  • 1 tsp
    baking powder
  • 1 1/2 c
    all-purpose flour
  • 3/4 c
    milk
  • 1 Tbsp
    rum
  • 1 Tbsp
    vegetable oil
  • 1/4 c
    powdered sugar

How To Make german apple cake

  • Grease a springform pan while the oven preheats.

    Preheat the oven to 350 degrees F. Grease a 10-inch springform pan with 1 Tbsp of butter.
  • Cut decorative slits lengthwise into peeled and cored apples about 1/2 inch deep.

  • Sprinkle 3 Tbsp of lemon juice and 3 Tbsp sugar.
