Ingredients For georgia's banana cake
- CAKE:

2/3 cshortening

2 1/2 ccake flour, sifted

1 2/3 csugar

1 1/4 tspbaking powder

1 tspbaking soda
-
1 tspsalt
-
1 1/4 cbananas, mashed

2/3 cbuttermilk
-
2 lgeggs
-
2/3 cpecans, chopped
- BUTTERCREAM FROSTING

1/3 cbutter, softened
-
1 pkg(8 oz) cream cheese, softened

1 boxpowdered sugar (16 oz)

1 lgegg yolk
-
1 1/2 tspvanilla

2 Tbspmilk
How To Make georgia's banana cake

1For the cake: Do NOT use a mixer ... Stir shortening to soften; sift in dry ingredients. Add bananas and 1/2 of the buttermilk. Mix until flour is dampened.

2Beat vigorously by hand for 2 minutes. Add remaining buttermilk and eggs; beat 2 minutes longer by hand. Fold in nuts.

3Pour into 2 greased and floured round cake pans. Bake at 350 degrees for app. 35 minutes.

4Remove from oven and cool on wire rack before inverting onto cake plan and frosting.

5For the frosting: Mixer allowed. Cream butter and cream cheese gradually with about 1/2 box of sugar; blend well.

6Beat in egg yolk and vanilla; gradually blend in remaining sugar. Add enough milk to make frosting a good spreading consistency. Ice layers.
