While sitting in the Doctor's office yesterday I ran across this recipe in Woman's Day. It looks so good I asked the girls to copy it for me and thought I would post it.

Ingredients For gama's apple spice cake

3granny smith apples, halved and cut into 1/2

2macintosh apples, halved and cut into 1/2

1 Tbspfresh lemon juice, plus a 1/4 teaspoon of lemon zest

3 call purpose flour

1 1/2 tspbaking soda

1/4 tspkosher salt
-
1 1/8 tspground cinnamon

4large eggs
-
2 cgranulated sugar
-
1 cvegetable oil
-
1/2 corange juice
-
2 1/2 tsppure vanilla extract
-
confectioner's sugar
How To Make gama's apple spice cake

1Preheat oven to 350*

2Coat a 9 x 13 inch baking pan with cooking spray. Line with parchment leaving an overhang on two sides.

3In a large bowl, toss the apples with the lemon juice.

4I am medium bowl whisk together the flour, baking soda, salt and 1 tsp. cinnamom.

5In a large bowl, whisk the eggs, granulated sugar, oil,orange juice and vanilla
-
6Add the flour mixture and whisk together. Add half the apples and mix to combine.

7Spread into prepared pan.

8Arrange the remaining apples on top. Sprinkle with the remaining cinnamon.

9Bake 55 to 60 minutes until a wooden pick inserted into the center comes out clean.

10Let cool for 15 mintues in the pan, using the overhang, transfer cake to wire rack to cool completely: Dust with confectioner's sugar. Carefully peel off the parchment paper and place on serving dish.
