While sitting in the Doctor's office yesterday I ran across this recipe in Woman's Day. It looks so good I asked the girls to copy it for me and thought I would post it.

Ingredients For gama's apple spice cake

    granny smith apples, halved and cut into 1/2
  • 2
    macintosh apples, halved and cut into 1/2
  • 1 Tbsp
    fresh lemon juice, plus a 1/4 teaspoon of lemon zest
  • 3 c
    all purpose flour
  • 1 1/2 tsp
    baking soda
  • 1/4 tsp
    kosher salt
  • 1 1/8 tsp
    ground cinnamon
  • 4
    large eggs
  • 2 c
    granulated sugar
  • 1 c
    vegetable oil
  • 1/2 c
    orange juice
  • 2 1/2 tsp
    pure vanilla extract
  • confectioner's sugar

How To Make gama's apple spice cake

    Preheat oven to 350*

    Coat a 9 x 13 inch baking pan with cooking spray. Line with parchment leaving an overhang on two sides.

    In a large bowl, toss the apples with the lemon juice.

    I am medium bowl whisk together the flour, baking soda, salt and 1 tsp. cinnamom.

    In a large bowl, whisk the eggs, granulated sugar, oil,orange juice and vanilla

    Add the flour mixture and whisk together. Add half the apples and mix to combine.

    Spread into prepared pan.

    Arrange the remaining apples on top. Sprinkle with the remaining cinnamon.

    Bake 55 to 60 minutes until a wooden pick inserted into the center comes out clean.

    Let cool for 15 mintues in the pan, using the overhang, transfer cake to wire rack to cool completely: Dust with confectioner's sugar. Carefully peel off the parchment paper and place on serving dish.
