This is not my recipe, I got it out of a current magazine. I'm not sure I should post it, but I don't want to lose it!

Ingredients For "gama's apple spice cake"

3granny smith apples, cut in 1/2 inch wedges

2macintosh apples cut in 1/2 inch wedges

1 Tbsplemon juice

3 cflour
-
1 1/2 tspbaking soda

1/4 tspkosher salt

1 1/2 tspground cinnamon

4eggs
-
2 csugar
-
1 cvegetable oil
-
1/2 corange juice
-
2 1/2 tspvanilla

confectioners' sugar
How To Make "gama's apple spice cake"

1Heat oven to 350 degrees, Coat a 9 x 13 pan with cooking spray. Line pan with parchment, leaving an overhang on two sides.

2In a large bowl toss apple slices with lemon juice. Set aside.

3In a large bowl whisk together the eggs, sugar, oil, orange juice and vanilla.

4Mix the flour, salt, baking soda and 1 tsp cinnamon. Add this mixture to the egg mixture and blend well. Add 1/2 the apples and mix to combine. Spread in the prepared pan. Cover with remaining apples and rest of cinnamon.

5Bake until wooden pick inserted in the center comes out clean. 55 to 70 minutes. Let cool for 15 minutes in pan, using the overhang then transfer the cake to platter, slide out the parchment paper. When cooled completely, dust with confectioners' sugar.
