This is not my recipe, I got it out of a current magazine. I'm not sure I should post it, but I don't want to lose it!

Ingredients For "gama's apple spice cake"

  • 3
    granny smith apples, cut in 1/2 inch wedges
  • 2
    macintosh apples cut in 1/2 inch wedges
  • 1 Tbsp
    lemon juice
  • 3 c
    flour
  • 1 1/2 tsp
    baking soda
  • 1/4 tsp
    kosher salt
  • 1 1/2 tsp
    ground cinnamon
  • 4
    eggs
  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 1/2 c
    orange juice
  • 2 1/2 tsp
    vanilla
  • confectioners' sugar

How To Make "gama's apple spice cake"

    Heat oven to 350 degrees, Coat a 9 x 13 pan with cooking spray. Line pan with parchment, leaving an overhang on two sides.

    In a large bowl toss apple slices with lemon juice. Set aside.

    In a large bowl whisk together the eggs, sugar, oil, orange juice and vanilla.

    Mix the flour, salt, baking soda and 1 tsp cinnamon. Add this mixture to the egg mixture and blend well. Add 1/2 the apples and mix to combine. Spread in the prepared pan. Cover with remaining apples and rest of cinnamon.

    Bake until wooden pick inserted in the center comes out clean. 55 to 70 minutes. Let cool for 15 minutes in pan, using the overhang then transfer the cake to platter, slide out the parchment paper. When cooled completely, dust with confectioners' sugar.
