g/f banana spice cake
A dense, moist snack cake. Serve with a dollop of whipped cream, if desired. I know the amount of vanilla sounds like a lot, but it really ups the flavor of the cake. Adjust spices to your own tastes, or change them up with your favorites. Be sure to use alond flour, not meal, as the flour is finer grind.

3 calmond flour (not almond meal)

1/2 tspsalt

1 tspbaking soda

1/2 tspbaking powder (g/f)

1 tspground cinnamon

1/2 tspground nutmeg

1/2 tspground allspice

1/2 tspground ginger

1/2 tspground cardamom

1/4 choney (or agave nectar)

1/4 cvegetable oil

2eggs
-
1 Tbspvanilla extract

3ripe bananas, mashed
How To Make g/f banana spice cake

1Preheat oven to 350F. Lightly coat a 9-inch cake pan with nonstick cooking spray.

2In a large bowl, mix dry ingredients until well blended.

3In another bowl, mix wet ingredients until blended and stir into the dry ingredients, mixing until blended.

4Pour batter into prepared pan and bake 35-40 minutes.

5Cool completely in pan on wire rack.
