FUDGE MINT CAKE is divine, but "Health Nuts" like me may prefer this version. It uses all organic and healthful ingredients.The cocoa powder supplies calcium and the carob powder supplies magnesium. Your bones will love it!

Ingredients For fudgy minty health nut cake

  • 2 c
    flour (choose from or mix the following equivalents: 2 c. whole wheat flour, 1 3/4 c. amaranth flour, 1 1/2 c. organic corn flour, 1 1/2 c. millet flour, 1 3/4 c potato flour, etc.)
  • 1 Tbsp
    baking soda (double this when using dark flours)
  • 3 Tbsp
    raw organic cocoa powder
  • 3 Tbsp
    organic carob powder
  • 1 Tbsp
    xanthum gum or arrowroot
  • 1 c
    sucanat (or equivalent: 1 tsp. stevia powder or liquid; 2/3 c. molasses; or use part maple syrup and reduce oil slightly)
  • 1/2 tsp
    himalayan crystal salt or celtic sea salt
  • 1 1/2 c
    unsweetened organic applesauce
  • 1/4 c
    melted virgin coconut oil
  • 1 Tbsp
    natural vanilla (or homemade equivalent)
  • 1 Tbsp
    organic peppermint extract

How To Make fudgy minty health nut cake

    Whisk dry ingredients together in large bowl until well blended:

    In a smaller bowl, mix the wet ingredients and blend them quickly into the dry ingredients with a few strokes.

    Pour into a lightly oiled 10-inch bundt pan or 12 cupcake molds. Bake 50-60 minutes, until a toothpick comes out just covered with with moist crumbs. Cool on rack and then drizzle melted organic chocolate over the top.
