  • SIFT INTO A LARGE BOWL AND WHISK TOGETHER:
  • 2 c
    2 cups all-purpose flour
  • 2 tsp
    baking soda
  • 6 Tbsp
    unsweetened cocoa powder
  • 1 Tbsp
    cornstarch
  • 1 c
    white sugar
  • 1/2 tsp
    salt
  • 1 3/4 c
    unsweetened applesauce
  • 1/4 c
    oil (olive is best)
  • 1 Tbsp
    peppermint extract

How To Make fudgy mint cake

    Whisk dry ingredients together in a medium bowl. Mix wet ingredients in a smaller bowl and stir into flour mixture with a few quick strokes.

    Pour into a lightly oiled 10-inch bundt pan, or a dozen cupcake molds. Bake cake 50-60 minutes, cupcakes less -- until a toothpick comes out just moist. Cool on rack and frost with a glaze icing
