Ingredients For fudge filled cupcakes

2/3 csemi-sweet chocolate chips

1 lgegg, beaten

1/4 csugar

8 ozcream cheese, softened

1 call purpose flour

1 1/2 csugar

4 lgeggs

1 1/4 tspvanilla extract

6 ozbutter
-
1/2 csemi-sweet chocolate chips
How To Make fudge filled cupcakes

1Preheat oven to 350 degrees.

2Line 30 cupcake tins with paper or foil cupcake liners.

3In double boiler, set over medium heat, melt the 2/3 cup of chocolate chips, butter and vanilla.

4Stir until smooth.

5Remove from heat.

6Beat the eggs until frothy, using a whisk or electric mixer.

7Gradually, beat in the sugar until it dissolves.

8Gradually, beat in the flour.

9Fold in the chocolate mixture.

10Fill the cupcake tins 1/3 full with the chocolate batter.

11Mash together the cream cheese, sugar and egg until blended.

12Fold in the 1/2 cup of chocolate chips.

13Drop a heaping teaspoonful of filling into each cupcake.

14Cover cream cheese filling with another generous spoonful of batter.

15Bake for 25 to 30 minutes.

16Let cupcakes cool completely on a rack before storing in a covered container.
