I decided to create this recipe to have something easy and yummy. My husband said this was the best cake of his life ans he wants it every year for his birthday!

Ingredients For fruit cocktail cake

    egg
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    cinnamon
  • 1 pinch
    nutmeg
  • 1 can
    fruit cocktail (15 oz)
  • 1 pinch
    salt
  • 1 c
    all purpose flour
  • 1 c
    shredded coconut
  • 1 tsp
    baking powder
  • 1/2 c
    powdered sugar, optional

How To Make fruit cocktail cake

    In a large bowl, add the egg, sugars, vanilla, cinnamon, nutmeg, fruit cocktail, and salt. Mix well.

    Add the flour, coconut, and baking powder, mixing until just combined.

    Pour into a greased baking dish. (I used an 11x8.) Spread into an even layer.

    Place in a preheated 350 degree F oven and bake 30-35 minutes or until golden brown and a toothpick comes out clean.

    Dust with powdered sugar, if using. Cut into squares and enjoy.
