I decided to create this recipe to have something easy and yummy. My husband said this was the best cake of his life ans he wants it every year for his birthday!

Ingredients For fruit cocktail cake

1/2 csugar

1/2 cbrown sugar

1 tspvanilla extract

1/2 tspcinnamon

1 pinchnutmeg

1 canfruit cocktail (15 oz)

1 pinchsalt

1 call purpose flour
-
1 cshredded coconut
-
1 tspbaking powder

1/2 cpowdered sugar, optional
How To Make fruit cocktail cake

1In a large bowl, add the egg, sugars, vanilla, cinnamon, nutmeg, fruit cocktail, and salt. Mix well.

2Add the flour, coconut, and baking powder, mixing until just combined.

3Pour into a greased baking dish. (I used an 11x8.) Spread into an even layer.

4Place in a preheated 350 degree F oven and bake 30-35 minutes or until golden brown and a toothpick comes out clean.

5Dust with powdered sugar, if using. Cut into squares and enjoy.
