I decided to create this recipe to have something easy and yummy. My husband said this was the best cake of his life ans he wants it every year for his birthday!

Ingredients
- 1 egg
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 pinch nutmeg
- 1 can fruit cocktail (15 oz)
- 1 pinch salt
- 1 cup all purpose flour
- 1 cup shredded coconut
- 1 teaspoon baking powder
- 1/2 cup powdered sugar, optional
How To Make fruit cocktail cake

Step 1In a large bowl, add the egg, sugars, vanilla, cinnamon, nutmeg, fruit cocktail, and salt. Mix well.

Step 2Add the flour, coconut, and baking powder, mixing until just combined.

Step 3Pour into a greased baking dish. (I used an 11x8.) Spread into an even layer.

Step 4Place in a preheated 350 degree F oven and bake 30-35 minutes or until golden brown and a toothpick comes out clean.

Step 5Dust with powdered sugar, if using. Cut into squares and enjoy.
