I wrote this recipe just a couple weeks ago when I had a craving for fruitcake. It might not be that traditional or what you are use to but its pretty good. Give it a try.

Ingredients For fruit cake

1/2 csolid shortening

1 cbutter or margarine

3 cbrown sugar

5 lgeggs
-
3 call purpose flour
-
1 tspsalt
-
1 tspbaking powder
-
1 Tbspcinnamon
-
1 tspnutmeg
-
1 Tbspvanilla
-
1 cshredded coconut
-
1 cmarshino cherries, drained and chopped

1 cpecans or walnuts, chopped

1 cpineapple tidbits, drained

1 capplesauce
-
1 craisins
How To Make fruit cake

1Cream together shortening, butter or margarine and brown sugar.

2Add eggs one at a time.

3Add vanilla.

4In a large bowl combine flour, salt, baking powder, cinnamon, nutmeg, coconut, cherries, pecans or walnuts, pineapple, and raisins and mix until all the fruit is coated with flour.

5Add flour and fruit mixture at one to mixer along with applesauce and mix just until combined.

6Pour into a greased and floured tube pan.

7Bake at 325 degreese for 1 hour and 15 minutes without opening the oven door. Check cake with a knife or long toothpick to see if it is done. If the knife or toothpick comes out still wet bake a little longer. When done allow to cool atleast 30 minutes before removing it from the pan.
