This recipe was given to me by my mother-in-law almost 30 years ago and is really more like a coffee cake.

Ingredients For fresh rhubarb cake

1/2 cshortening

1 1/2 csugar

1/2 tspsalt

1 mdegg

1 tspbaking soda

1 csour milk or buttermilk

2 cplus 1 tbsp flour

3-4 cfresh rhubarb, cut fine
- TOPPING
-
1/3 csugar
-
1/3 cchopped walnuts or pecans

1 tspcinnamon
How To Make fresh rhubarb cake

1Cream shortening, add sugar and mix well. Add salt, beat in egg. Add soda to the milk; stir to combine then add milk mixture and the flour alternately. Beginning and ending with flour.

2Stir in rhubarb. Pour into 9x13 or 2-round metal cake pans. Mix topping ingredients together & sprinkle over cake batter.

3Bake 45 minutes at 350 degrees.
