In the early 1960's my mom worked at Parke Davis with a woman named Joyce who was a fantastic baker. This is one of her recipes, and everyone I've ever served it to has raved about it and requested the recipe. I hope others here will enjoy it too.

Ingredients For fresh apple cake

1 csalad oil

2 csugar

3beaten eggs

3 csifted flour

1 tspbaking soda

1 tspsalt

1 tspcinnamon

3 cfinely chopped apple

1 tspvanilla extract
- CAKE FROSTING

1/2 cbutter
-
1 clight brown sugar
-
1/4 cevaporated milk
-
2 tspvanilla extract
How To Make fresh apple cake

1Mix oil, sugar, beaten eggs and vanilla in large bowl.

2Sift dry ingredients and add to oil egg mixture.

3Fold in apples and chopped nuts.

4Place batter into a greased and floured tube pan or bundt pan.

5Bake at 325 for 45 minutes to an hour or until toothpick inserted into cake tests clean.

6Next to make frosting mix butter, brown sugar, and evaporated milk in saucepan.

7Bring mixture to a full boil stirring constantly for about 1 minute.

8Remove from heat and let cool, then add 2 teaspoons of vanilla extract

9Let cake cool about 45 minutes and spoon frosting over the top
