I got this recipe while on a Mission trip to Paris, Tennessee. It makes good muffins and I also make small loaves for gifts at Christmas.

Ingredients For fresh apple cake

  • 2 c
    sugar
  • 3
    eggs
  • 1 tsp
    vanilla
  • 1 tsp
    cinnamon
  • 1 c
    pecans
  • 3 c
    all purpose flour
  • 1 1/4 c
    oil
  • 1/4 c
    orange juice
  • 1 tsp
    soda
  • 1/4 tsp
    salt
  • 1 c
    chopped apple
  • 1 c
    coconut
  • 2 c
    powdered sugar
  • 1/2 c
    orange juice

How To Make fresh apple cake

    Mix together sugar and oil.

    Add eggs, orange juice and vanilla.

    Sift together flour, soda, salt and cinnamon.

    Add to first mixture.

    Stir in apples, nuts and coconut.

    Pour mixture in a greased and floured tube pan or a 9 X 12 pan. I also use muffin pans.

    Bake at 325 degrees for 1 hour twenty minutes. Check to see if done by using a toothpick. It make take longer than the time allotted here.

    Glaze: mix together powdered sugar and orange juice.

    Poke holes in cake and pour glaze over cake. The cake will absorb the mixture.
