I got this recipe while on a Mission trip to Paris, Tennessee. It makes good muffins and I also make small loaves for gifts at Christmas.

Ingredients For fresh apple cake

2 csugar

3eggs
-
1 tspvanilla

1 tspcinnamon

1 cpecans

3 call purpose flour

1 1/4 coil

1/4 corange juice

1 tspsoda
-
1/4 tspsalt

1 cchopped apple
-
1 ccoconut
-
2 cpowdered sugar

1/2 corange juice
How To Make fresh apple cake

1Mix together sugar and oil.

2Add eggs, orange juice and vanilla.

3Sift together flour, soda, salt and cinnamon.

4Add to first mixture.

5Stir in apples, nuts and coconut.

6Pour mixture in a greased and floured tube pan or a 9 X 12 pan. I also use muffin pans.

7Bake at 325 degrees for 1 hour twenty minutes. Check to see if done by using a toothpick. It make take longer than the time allotted here.

8Glaze: mix together powdered sugar and orange juice.

9Poke holes in cake and pour glaze over cake. The cake will absorb the mixture.
