This is my daughter's recipe. It is perfect for Autumn. Hope you enjoy this apple cake. Try it with a hot cup of fresh coffee or tea.

1 1/2 cvegetable oil

2 cgranulated sugar

3 lgeggs

3 cflour, all-purpose, sifted

1 tspsalt

1 tspbaking soda

3 capples, tart and chopped

1 cpecans, chopped

2 tspvanilla, pure extract
- FROSTING
-
1/2 cbutter
-
1 cbrown sugar, firmly packed

1/4 cevaporated milk
-
1 tspvanilla flavoring
How To Make fresh apple cake

1Beat the oil and sugar together until well blended. Add eggs one at a time, beating well after each. Sift together flour, salt and soda, add gradually to egg mixture, blending thoroughly. Stir in apples, pecans and vanilla. Pour in greased and floured 10-inch tube pan. Bake in 350 degree oven for 60-70 minutes.

2Directions for Frosting: In a saucepan over medium heat, melt butter with brown sugar; add milk and bring to a rolling boil. Boil for 2 or 3 minutes, cool and add vanilla. If frosting is not thick, beat a few strokes. Frost top and sides of cake.
