This is a wonderful cake, and most everyone loves it, I make it a lot for Bake Sales and its the first to go. I think the cherries, pineapple and nuts makes the cake. It is very moist and it gets better with age. If you can keep it in the house that long. Will freeze well also.

Ingredients For fresh apple cake

2 csugar

1 ccooking oil
-
2eggs
-
1 tspsalt

1 tspbaking soda

1 tspvanilla

3 cchopped, peeled apples (i used fuji & red delicious)

1 cchopped pecans
-
1 ccrushed pineapple, drained

1/2 cmaraschino cherries, chopped

3 call purpose flour
How To Make fresh apple cake

1Cream sugar, oil;

2add eggs. Beat Well.

3Add salt, soda, vanilla, apples, nuts, pineapples, cherries; mix well.

4then add flour a little at a time. Blend well after each addition.

5Pour in well greased and floured tube pan and bake one hour at 350 degrees.

6***NOTE*** can also be bake in mini loaf pans for one hour. (Makes about 8-10 mini loaf) This cake is wonderful without a glaze, but is also good with a powdered sugar glaze.
