1-3/4 cquick-cooking oats

3/4 clight brown sugar

1 tspbaking soda

1/2 tspbaking powder

1 tspground cinnamon

1 capplesauce, unsweetened

1/4 ccanola oil

1large egg

1 tspvanilla extract

How To Make flourless applesauce oatmeal walnut snack cake

1Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.

2Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.

3In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.

4Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.
