This is my late mother's recipe. She was a real country cook and she used figs grown right outside her kitchen door to make this delicious and easy to make cake.

Ingredients For fig cake

3 lgeggs

1 csugar
-
1 cvegetable oil

1/2 cbuttermilk

1 tspvanilla extract

2 call purpose flour
-
1 tspbaking soda

1 tspsalt

1 tspground cinnamon
-
1/2 tspground cloves
-
1/2 tspground nutmeg

1 1/2 cfig preserves
-
1/2 capplesauce
-
1 cchopped pecans, toasted
How To Make fig cake

1Beat first three ingredients at medium until blended.

2Add buttermilk and vanilla. Beat well.

3Combine the next six ingredients and gradually add to buttermilk/eggs/sugar/oil/vanilla mixture. Beat until blended.

4Fold in figs, applesauce, and pecans.

5Pour batter into two 8 inch floured and greased cake pans.

6Bake at 350 degrees for 35-40 minutes.
