This is my late mother's recipe. She was a real country cook and she used figs grown right outside her kitchen door to make this delicious and easy to make cake.

Ingredients For fig cake

  • 3 lg
    eggs
  • 1 c
    sugar
  • 1 c
    vegetable oil
  • 1/2 c
    buttermilk
  • 1 tsp
    vanilla extract
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground cloves
  • 1/2 tsp
    ground nutmeg
  • 1 1/2 c
    fig preserves
  • 1/2 c
    applesauce
  • 1 c
    chopped pecans, toasted

How To Make fig cake

  • 1
    Beat first three ingredients at medium until blended.

    Add buttermilk and vanilla. Beat well.
  • 3
    Combine the next six ingredients and gradually add to buttermilk/eggs/sugar/oil/vanilla mixture. Beat until blended.

    Fold in figs, applesauce, and pecans.

    Pour batter into two 8 inch floured and greased cake pans.

    Bake at 350 degrees for 35-40 minutes.
