Another recipe from my grandma. My mom makes these A LOT. I really don't care for raisins, but they really don't bother me in this recipe.

Blue Ribbon Recipe

A piece of these coffee squares with a cup of steamy coffee... what a way to start the day! These are moist, cake-like bars spiced with warm cinnamon and cloves. They're filled with plump raisins. If you don't think you like raisins, you may have a new appreciation for them after trying a piece of this cake. On top, is a simple powdered sugar frosting that adds the right amount of sweetness.

Ingredients For favorite coffee squares

  • 1 c
    raisins
  • 2 c
    water
  • 1/2 c
    shortening
  • 1 lg
    egg
  • 1 c
    granulated sugar
  • 2 1/2 c
    all-purpose flour, sifted
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1/2 tsp
    cloves
  • 1/2 tsp
    cinnamon
  • FROSTING
  • 1 c
    powdered sugar
  • 2 Tbsp
    milk, approximately
  • 1/2 tsp
    vanilla extract

How To Make favorite coffee squares

  • Raisins plumped until only 1 cup of liquid remains.

    Cook raisins in water until only 1 cup liquid remains.
  • Hot liquid added to the shortening.

    Add hot liquid to shortening. Set aside and let cool.
  • Eggs and sugar mixed together.

    Beat eggs and sugar together.
  • Shortening mixture whisked into the eggs/sugar.

    Stir in the shortening mixture.
  • Dry ingredients blended in.

    Blend in dry ingredients.
  • Folding in raisins.

    Fold in raisins.
  • Batter spread into a sheet pan.

    Spread in greased 10x15 cookie sheet with edges.
  • Coffee Squares baked until golden brown.

    Bake at 350 degrees for 20-25 min until browned.
  • Preparing the frosting.

    Prepare the powdered sugar frosting.
  • Coffee Squares covered in frosting.

    Frost with powdered sugar frosting while still warm. Cut into squares.
