My mother found this in a Bacardi recipe book sometime in the mid 1980s. It has been a favorite ever since. We tend to make this without the glaze. Personal preference.

Ingredients For famous bacardi rum cake

1 cchopped pecans or walnuts

18 1/2 ozpkg. yellow cake mix (betty crocker super moist works well)

3 3/4 ozpkg. jell-o vanilla instant pudding and pie filling

4eggs
-
1/2 ccold water
-
1/2 cwesson oil
-
1/2 cbacardi dark rum
- FOR THE GLAZE:

1/4 lbbutter
-
1/4 cwater
-
1 cgranulated sugar

1/2 cbacardi dark rum
How To Make famous bacardi rum cake

1Preheat oven to 325 degrees F. Grease and flour 10" tube or 12-cup Bundt pan. Sprinkle nuts over bottom of pan.

2Mix all cake ingredients together. Pour batter over nuts.

3Bake 1 hour. Cool. Invert on serving plate.

4Prick top. Drizzle and smooth glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until glaze is used up.

5For glaze: Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum.
