If you're looking for a quick and easy dessert this summer to feed the whole family, this is it! (... and it looks really nice, too!) There are times when I want to make strawberry shortcake, but I don't feel like dealing with individual servings. This is also great to take to your next family gathering or cook-out! Note: Recipe is for 1 cake mix. Double the ingredients to make the 4-layer cake shown for larger groups. If making the larger cake, use 2 long wooden picks through all 4 layers to hold layers firmly in place.

Ingredients For family-size strawberry shortcake

1 pkgwhite or yellow cake mix, 18.25 oz., prepared and cooled in 2-9" cake pans

1 1/2 qtfresh strawberries

1/4 csugar
-
1 1/2 cwhipping cream

1/4 cconfectioners' sugar

1 tspvanilla extract
How To Make family-size strawberry shortcake

1Reserve 8-10 large strawberries for garnish. Slice remaining berries and place in a medium bowl. Sprinkle with granulated sugar. Mash slightly. Chill at least 30 minutes.

2Beat whipping cream in a medium bowl with a hand mixer on high speed until stiff peaks form. Add confectioners' sugar and vanilla until just mixed.

3Place 1 cake layer on serving plate. Cover with mashed strawberries.Top with about 1 1/2 c. whipped cream. Place second cake layer on top. Spread with remaining whipped cream. Garnish with reserved strawberries.
