This recipe comes from a friend I used to work with years ago. She brought this coffee cake for a potluck and I just had to get the recipe.

Ingredients For esther's coffee cake

  • BATTER
  • 1 pkg
    yellow cake mix
  • 1 pkg
    vanilla instant pudding
  • 3/4 c
    water
  • 3/4 c
    oil
  • 4
    eggs
  • 1 tsp
    pure vanilla
  • 1 tsp
    butter extract
  • NUT MIX
  • 1/2 c
    ground nuts... can't remember what kind of nuts where use....thinking pecans
  • 2 tsp
    cinnamon
  • 1/4 c
    sugar
  • GLAZE
  • 1 c
    powdered sugar
  • 3 Tbsp
    milk
  • 1/2 tsp
    vanilla extract
  • 1/2 Tbsp
    butter extract

How To Make esther's coffee cake

  • 1
    Mix all the ingredients for the batter in a bowl.

    Combine all of the nut mix ingredients in a separate bowl.
  • 3
    Grease an angel food pan. In layers starting with the nut mix, then the batter put 1/3 of it in the pan, alternating with the batter.

    Bake at 350 for 1 hour. Glaze when cool.
