Fresh Apple Cake is so moist and flavorful! My mother, Elsie Forbes, began making this recipe in 1962 when she got the recipe from a family friend and someone who worked with my father. The cake became my maternal grandfather's favorite cake for birthdays, holidays, just at any time. It became known as "Elsie's Fresh Apple Cake" among friends and family.

1 1/2 cvegetable oil

2 cgranulated sugar

3 lgeggs, beaten

4 cWinesap, Red Delicious, or Granny Smith apples, peeled and diced

1 cchopped nuts

3 call-purpose flour

1 1/2 tspbaking soda

1/2 tspsalt

2 tspalmond extract

2 tspvanilla extract

2 tspbutter extract

3/4 capplesauce

1/2 cbuttermilk
How To Make elsie's fresh apple cake

1Preheat oven to 350 degrees Fahrenheit. Grease and lightly flour a tube (or Bundt) pan; set aside. Note: 2-3 loaf pans (8-1/2" x 4-1/2" x 2-1/2") can be substituted for the tube pan; filling each approximately two-thirds full. Test with a knife or toothpick for doneness as baking time will be reduced.

2Using a large spoon, mix all ingredients in a large bowl.

3Bake for 1 1/2 hours or until inserted knife comes out clean.

4Ten (10) minutes after removing the cake from the oven - OR when the cake is completely cooled - invert the cake onto a plate (with the bottom turned upwards).

5Note: No icing or frosting is needed as this cake is very moist; the top of the cake will have a crunchy texture. If icing is desired, melt approximately 2 Tbsp of butter in a small bowl. Add 2-3 Tbsp brown sugar and 1 1/2 tsp vanilla extract. Stir together and drizzle over the top of the cake.
