Ingredients For easy fruitcake

  • 2 1/2 c
    all purpose flour
  • 1 1/2 c
    unsweetened apple sauce
  • 1 1/4 c
    sugar
  • 1/2 stick
    butter or margarine, softened
  • 1/2 c
    water or your favorite liquor
  • 1 1/2 tsp
    baking soda
  • 1 1/2 tsp
    pumpkin pie spice
  • 1 tsp
    salt
  • 3/4 tsp
    baking powder
  • 2 lg
    eggs, beaten
  • 2/3 c
    chopped nuts
  • 1 c
    raisins
  • 32 oz
    fruitcake mix soaked in your liquor

How To Make easy fruitcake

    Heat oven to 350*. Grease bottom and sides of loaf pans or tube pans with shortening and lightly flour. Soak fruitcake mix in your favorite liquor will mixing the cake batter, drain well then use.

    Beat all ingredients, except raisins, nuts and fruitcake mix in large bowl with electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in raisins, nuts and fruitcake mix. Pour into pan(s).

    Bake 45 to 50 minutes (cooking times may vary depending on your oven) or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Remove and cool completely.

    Do not use self rising flour in this recipe.
