1IN A SMALL BOWL MIX CREAM CHEESE, UNSALTED BUTTER, POWDERED SUGAR, VANILLA EXTRACT COCONUT EXTRACT AND COCONUT FLAKES UNTIL BLENDED. WITH A CAKE BEATER, BEAT AT HIGH SPEED UNTIL SILKY SMOOTH AND CREAMY. COVER WITH A LID AND REFRIGERATE.

2PREHEAT OVEN TO 325. IN A LARGE BOWL ADD CAKE MIX, EGGS, COCONUT MILK, WATER, 1 STICK OF BUTTER, COCONUT EXTRACT & COCONUT FLAKES. MIX WITH A LARGE SPOON UNTIL BLENDED. WITH A CAKE BEATER, BEAT AT HIGH SPEED FOR 2 ½ - 4 MINUTES. BATTER WILL BE THICK.

3WITH THE 1 TBSP. OF BUTTER, BUTTER 2 8” ROUND OR 1 13X9” GLASS CAKE PAN. SPOON IN THE BATTER AND SPREAD EVENLY. BAKE FOR 15 – 20 MINUTES OR UNTIL GOLDEN BROWN AND KNIFE ENTERED IN THE CENTER COMES OUT CLEAN. IN THE MEANTIME, REMOVE THE FROSTING FROM THE REFRIGERATOR TO SOFTEN. COOL THE CAKE COMPLETELY THEN FROST IT.
