I have always loved carrot cake. Everybody asks me to make my carrot cake for them. When I found this recipe in Ma's recipe box (found in July 2019 in NC) with the way to make it shaped like a bunny, I was very excited. It is another Easter cake tradition like Grandma W's Lamb Cake!

1 cbutter, softened (2 sticks)

1 cshredded carrots (2 large)

1/2 cchopped pecans

1 tspvanilla
- QUICK BUTTERCREAM FROSTING

1/2 cbutter (1 stick), softened

3 csifted powdered sugar

1/2 tspsalt

1 1/2 tspvanilla
- DECORATIONS

red licorice ropes for whiskers

jelly beans
How To Make easter carrot cake, ma

1In large mixing bowl, beat butter and sugar until light and fluffy. Add eggs 1 at a time, beat after each. Stir together flour, powder, cinnamon, salt, ginger and nutmeg. Add about 1/2 c flour mixture to egg mixture alternately with 1/4 c milk. Repeat with all flour and milk. Blend in carrots, pecans and vanilla. Pour into greased, wax-paper lines 9x13.Bake at 375 degrees until toothpick test, 45-50 min. Cool on wire rack completely. Leave in pan, or make bunny (directions below). Frost with buttercream frosting.

2Buttercream frosting: In small bowl, beat butter light and fluffy. Gradually beat in powdered sugar. Add salt. Blend in cream and vanilla until desired spreading consistency.

3To Shape Easter Bunny: Loosen edges of cake with spatula. Invert to serving tray or cutting board. Remove wax paper. With sharp knife cut 2 circles out of cake for body and head (use 2 different size bowls or plates as patterns). Cut a long narrow triangle from each of 2 corners for ears. Assemble pieces to form bunny. Frost with Quick Buttercream Frosting. Cut thin strips from red licorice ropes for whiskers, use jelly beans to form eyes, nose, and other desired decorations.
